OATMEAL COOKIES

DIFFICULTY: The only difficulty here is keeping your hand out of the cookie jar.

TIME: 13 and a half minutes (plus sitting in fridge time).

What you’ll need from the cupboard: Cookie sheet. Mixing bowl. Spatula. Rubber spatula. The cooling rack. A frosting spreader (yes, a frosting spreader).

What you’ll need from the pantry: 2 eggs, 2 cups of flour, 2 stick of unsalted butter, a cup granulated sugar, a cup packed brown sugar, vanilla extract. 1-1/2 teaspoons of cinnamon. 1 teaspoon of baking soda. 1 teaspoon of salt. 3 cups of Quaker oats. Pam Cooking Spray. Saran Wrap. Parchment paper.

Mix the 2 sticks of butter, a cup of granulated sugar, and a cup of brown sugar together.

Add an egg. Here, I begin mixing with a fork. Use what you like. Mix well. Add the other egg. Mix well.

Add a teaspoon of vanilla. Mix well.

Add the flour, a little at a time. Add 1 teaspoon of baking soda. Mix well.

Add the cinnamon, 1-1/2 teaspoons. Mix well.

Now, fold in the oatmeal. This gets tough. Haha. But, fold it all together, mixing well, leaving no clumps of dry oats.

Cover with Saran Wrap.

Refrigerate for one hour.

During this idle time, download Lover Come Back, my memoir. Start reading it. When you’ve got to chapter ten or fifteen, preheat the oven to 375.

Read another chapter.

Get the dough out of the fridge.

Spoon out balls of dough about the side of a Roma tomato. Place the cold little dough balls on a parchment paper lined cookie sheet and flatten them with the frosting spreader.

Bake at 375 for 8 minutes (the cookies, not the spreader).

Let cool for a few minutes before trying to scrape them free.

Carefully scrape them free with the spatula and transfer them to the tabs down wire rack.

Eat a few while they’re still warm. Let the rest cool.

Enjoy with milk, coffee, or as a sandwich (with some of your leftover cream cheese frosting between).

Enjoy.
