METHOD
1. Mix lime juice and water and pour over large pan (do not use aluminum) of chopped tomatoes. Let sit over night.
2. In morning: Rinse tomatoes 3 or 4 times.
3. Pour 1/2 cup of salt over tomatoes and let sit in sink.
4. In large pot add sugar and vinegar to onions, bell peppers and jalapeños and bring to boil.
5. Let boil 1 minute.
6. Drop tomatoes ( do not rinse salt off) into boiling mixture and barely heat until tomatoes change color.
7. Do not boil
8. Seal in jars.
MUSCADINE WINE

20–23 standard 750 ml bottles
INGREDIENTS
• 2 ½ gallons of muscadine grapes
• 10 lbs sugar
• ½ package of non-fast-acting yeast
METHOD
1. Clean grapes thoroughly and crush.
2. Place in a large container (no aluminum)
3. Add 2 cups of sugar (set rest aside)
4. Mix and let set 48 hours, covered.
5. Squeeze juice through muslin and pour into a winemaking jug.
6. Dilute 9 lbs of sugar (rest of the 10 lb bag) with 1 gallon of lukewarm water.
7. Add yeast to liquid and dissolve
8. Pour liquid into a 5-gallon jug with juice and add enough cool water (not cold) to fill jug to the top of the curve.
9. Cork with a wine plug.
10. Takes 6 months or more to ferment and be ready to bottle
